What is RC

Sorry, I know this is a stupid question from an idiot, but what is RC. I know everyones like "mmmm I can't wait for Beta to be over and the RC release" or something like that, but I don't know what it is. I know what beta is, but what is the difference between it and RC?

RC = Release Candidate. The RC phase begins when the beta phase ends -- when the software appears to be ready for delivery. The RC phase opens things up to wider (e.g. live) testing, and it amounts to the final shakedown of the software before final release.

And just to clarify, is it true that RC 1 will be safe enough to use in a Live Environment?

Adric: it really depends on your application. It's basically the dev team saying, we think there's no major bugs anymore, feel free to use it for live sites. It also means there will be support and security updates, contrary to beta phase. So it's at least safer to run on a live site.

However, if you have a very mission critical board or you are particularly paranoid (a good trait for a sys admin ;)), you may choose to wait for the final release (e.g. when a lot of boards already went live with the RCs and you can be more confident it really doesn't have any major bugs any more). There's even people who prefer to wait for a few minor releases (3.0.1, 3.0.2) before they upgrade.
