nano. it even has syntax highlighting now
if I want something a bit more functional I use bluefish or jEdit. i liked eclipse's CVS interface and the php-eclipse plugin (checks for parse errors when you save a file..for nub coders like me, that really helps).

I started out with PHPEdit, and I didn't like it's overall layout. I then found [url=http://"http://www.ultraedit.com/products/index.html"]UltraEdit[/url] and I've never used anything else since. Highly customizable, syntax highlighting, file comparing, and many, many other features. Not free, but well worth it, in my opinion.

Dreamweaver MX .. like it, but could do with less
My boss gave it to me, and it is very very usefull at work, but there we use Coldfusion.. and ya, CFML and Dreamweaver.. woohaa
I only code PHP in my freetime, and notepad would work just fine.. though code-highlighting would be missed, but since I've got the weaver anyway.. hell, why not use it then.

use vIM light ; code-highlighting ; powerfull ; can be used on windows/linux/bsd etc...
