RC= Release Candidate
Gold= Final Release

the RC stages are meant to be copies of the software that are fully ready to be released as the x.x.0 version.. All testing should have been done on it, all bugs ironed out etc..
Basically the Gold version is a repackaged RCx (x denotes number), and then released..

Possibly nothing, except for the label. If, say RC1 is released and no major bugs are found, it will simply be relabeled to 3.0.0, the final release. If on the other hand a big problem is found, it will be fixed and RC2 will be put out on the street. Etc.
The reason the RC stage could have bugs surface that were not found before is that people are encouraged to start using it for live sites, a big difference with the beta stage. It's basically the development team saying, "OK, we think it's good to go, we are comfortable having you running a live site on it".

Not quite...
I think what Eelke was trying to say is RC is the time where you can use it on live sites, where beta isn't (in part of answer to d4rkst4r123's question about RC/gold).
