I noticed that if you have loads of forums its hard to see what are forums and what are categories.
So cant categories be labled as bold in that drop down box?

in the context of v3, there are no (strictly speaking) "categories".
in this centext, "categories" mean forums which have subforums, or, if you want to be more restrictive, forums which have subforums and do not contain posts.
